You'll need...
4 cups cooked rice
1 cooked and shredded chicken breast
2 tbsp cooking oil (recipe suggested sesame, I used olive)
1 small onion, finely diced
1 cup mixed frozen vegetables
2 eggs
1/4 cup soy sauce
Heat oil in a pan. Add onion and mixed vegetables and cook until vegetables start to soften.
Add eggs and stir through vegetables until cooked.
Stir through shredded chicken and rice.
Stir through soy sauce.
Serve and enjoy :)
Tips:
- This is a really quick meal to put together so it pays to have everything ready before you start. I precook a chicken breast earlier in the day by popping it in an oven bag to roast for around 45 minutes.
- I use a microwave rice cooker which cooks the rice in around 10 minutes. I pop the rice on to cook just as I start to cook the vegetables and its ready just at the right time to add in. However, day old rice is meant to be best in fried rice.
