Red wine and white fish aren't traditionally paired together but this dish is absolutely delicious!
You'll need:
1 packet tortillas
4-6 pieces of fish (I used Tarakihi)
2 cloves garlic, crushed
1/4 cup fresh parsley, finely chopped
1/2 lemon, juice squeezed
1/3 cup olive oil
1/3 cup red wine
1 tsp dried oregano
fresh cracked black pepper
Marinate in the fridge for 20-30 minutes then pan fry for 3-5 minutes on each side.
When cooked break apart in to large flakes.
Your fish will be bright purple on the outside but beautifully white inside.
For the dressing you'll need:
1/4 cup plain yoghurt
1 tbsp lime juice
2 tbsp chopped coriander
1 clove crushed garlic
1/8 tsp cumin
Mix together in a bowl. Adjust to suit your tastes if necessary. I added more coriander.
Serve with fresh shredded lettuce and avocado. Delicious!
