I mentioned these amazing meatballs back over on the Best Ever Asparagus in less than 10 Minutes recipe. They are addictively delicious! You just can't stop at one or two. Both kids and adults love them which makes them a really family friendly recipe. And best of all, you oven bake them rather than browning them in a pan so they are a much healthier option.
3 slices bread (it's a great way to use up those crusts)
1 medium onion
1 teaspoon oregano
A pinch of salt
500gm mince (I used beef but lamb or pork would be lovely too)
Preheat your oven to 220 degrees celsius.
Break slices of bread in half, place in a food processor and chop finely until it resembles large bread crumbs.
Cut the onion in to quarters, add to the food processor and chop finely.
Add the oregano, salt and egg and mix briefly.
Break mince in to several large chunks and add to food processor. Pulse until everything is just combined. (Do not over mix as this will toughen the meatballs).
This next part would be good for the kids to get involved - especially those learning division and fractions at school. Divide the mixture in to quarters, then eighths, then sixteenths and finally in thirty two meatballs.
Cover a baking tray with a sheet of baking paper and bake for 12-15 minutes, or until the meatballs are cooked right the way through (break one apart to make sure it is not pink inside).
I like to serve the meatballs with a variety of fresh cut vegetables and sometimes a small portion of pasta on the side. Enjoy x
