Rosemary, Lemon and Panko Stuffed Chicken
I say this about every recipe but this. is. delicious! It's another go to recipe in our house. It is such a simple way to add huge flavour to chicken breasts.
Rosemary, Lemon & Panko Stuffed Chicken Breasts
2 tsp dried rosemary
4 cloves garlic, crushed
4 tbsp parmesan cheese, grated
3 tbsp panko breadcrumbs
Zest of 1 Lemon
3 tbsp softened butter
1 tsp salt
Combine all ingredients in a bowl.
(I usually leave all of the ingredients whole and whiz them up in a mini blender).
Slice a pocket in the side of 2 - 4 chicken breasts and fill with stuffing mixture.
Bake at 180°C for one hour or until the chicken is cooked through.
Serve with a side of fresh steamed vegetables.
