Made from Scratch Lemon Loaf

All the way back on May 2013 (yes, that's 16 months ago) the lovely Rachael from Made from Scratch gave me permission to share her beautiful lemon loaf recipe.  I'm finally getting round to it now :)

Two weeks ago my husband came home with two huge grocery bags of lemons.

He was renovating a 115 year old villa and the new owners said the original lemon tree had to go because they wanted to concrete.  Argh!  So sad!  My quick thinking husband grabbed as much fruit as he could from the tree before it was ripped out of the ground and sent to the tip.  So so sad!  The lemons you get from the supermarket look and taste nothing like these beauties!  My first thought (after I can't believe they got rid of that tree) was Lemon Loaf.  It is so simple, quick, easy and absolutely delicious.  Thank you so much Rachael for letting me share it here x

Made from Scratch Lemon Loaf

155g self-raising flour
1 teaspoon baking powder
155g caster sugar
20g cornflour
155g butter, softened
3 eggs
1 lemon, zested and juiced
Preheat oven to 180°C, grease and flour a loaf tin.
Sift the flour, baking powder, caster sugar and cornflour into the bowl of a food processor*.
Pulse the mixture for about 4 seconds until combined.
Add the butter, eggs, zest and juice of one lemon and process until evenly mixed – about 10 to 30 seconds.
Pour the mixture into the prepared loaf tin and bake for around 35-40 minutes, or until a skewer comes out clean.
Let the loaf cool in its tin before icing.
Drizzle Icing**
160g white sugar
2 lemons, juiced
To make the drizzle icing, juice the lemons and dissolve the sugar in the juice. Prick the whole surface of the loaf with a fork and pour the lemon mixture over the loaf, allow it to set before removing the loaf from the tin. Enjoy with a warm cup of tea! (or vanilla ice cream like me!)
*If you don’t have a food processor, you can still make this using a electric beater (I use my cake mixer)
**I used a basic butter lemon icing which is a nob of butter melted with a little hot water, icing sugar, the rind of one lemon, and the juice of one lemon.

This Lemon Loaf was also made with free range, straight out from under the chicken, fresh eggs from my husbands family farm.  Look at how yellow those eggs make that loaf!  Beautiful!

  1. yum, look delicious! It breaks my heart when mature fruit trees are discarded for the sake of landscaping. An incredible feijoa tree in our old neighbourhood met this fate recently too :(
