Broccoli Salad

This recipe is recreated from the memory of a similar salad I loved eating while in America.  I managed to track down a copy of the original recipe but cut out half of the ingredients making a much healthier but equally tasty version.  This is my current favourite side salad.  All of the flavours complement each other beautifully.

One head of broccoli, cut in to bite sized pieces
2-3 rashers of bacon, diced
1/4 red onion, diced
1 - 1 1/2 dessert spoons mayonnaise
2 dessert spoons malt vinegar
Small handful of grated cheese

Fry diced bacon in a pan and set to one side.
Place the broccoli in a pit of rapidly boiling water.  Boil 1 minute.  You want the broccoli to remain firm and bight green.
Drain broccoli and leave to cool.
Combine bacon, red onion, mayonnaise, malt vinegar and cheese with broccoli.
Serve immediately or chill for later.

*Note - Feel free to adjust the ingredient measurements or boiling time to suit your individual tastes.  I prefer firm, almost raw broccoli, and I like the mayonnaise to lightly coat the broccoli.  Start with just one tablespoon then add a little more if necessary.  Too much and the salad will become gluggy.
