Here's another fabulous recipe I was given years ago (I still have the scrunched up scrap of paper it was scribbled on) which is ideal for keeping those baking tins full. I call these cookies rather than biscuits because they are soft and pillowy.
Please remember that these do contain nuts so they might need to be an at home treat rather than a lunch box snack :)
113gms butter, softened
1/2 cup sugar
1/2 chocolate hazelnut spread*
1 1/2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon honey
1/2 cup chocolate chips
Preheat oven to 180°C.
Line two baking trays with baking paper.
Cream butter, sugar and chocolate hazelnut spread.
Add egg and honey and combine until nice and fluffy.
Sift flour, baking powder, baking soda and salt in to creamed mixture and combine.
Add chocolate chips and stir to combine.
Roll teaspoon sized scoops of mixture in to balls and place 4cm apart on lined baking trays.
Do not flatten the balls with a fork. They will spread and flatten upon baking.
Bake for 10-12 minutes.
Leave to cool for 5 minutes before transferring to a cooling rack.
* You can use products such as 100% Nutz Chocolate Peanut Spread and add crushed hazelnuts.
Or you can use good old Nutella.
