Open Spicy Chicken Burgers with Coleslaw
Here's another recipe which is delicious on the barbecue. By combining a few simple ingredients, you can transform a simple chicken burger in to a spicy flavour explosion.
2 tbsp avocado oil (or similar)
4 tbsp red onion, finely diced
1 clove garlic, crushed
2 tbsp coriander, finely chopped
2 tbsp flat leaf parsley, finely chopped
2 tbsp panko breadcrumbs
1 tbsp fish sauce
1 tbsp sweet chilli sauce
Heat 1 tbsp of oil over a medium heat.
Add onion and garlic and cook until is transparent (approx. 3-4 minutes).
Combined cooked onion and garlic in a bowl with the coriander, parsley, breadcrumbs, fish sauce and chilli sauce and oil.
I like to cut two chicken breasts horizontally through the middle and massage the rub in to the chicken. Leave to sit for 10 - 15 minutes before barbecuing.
I like to serve on a slice of ciabatta bread and topped with healthy coleslaw and a side of fresh chopped vegetables or home made wedges.
