Raspberry Semi Freddo

It was my Mum's birthday at the beginning of January and we hosted a big family barbeque at our house to celebrate.  I was on desserts and wanted to make something frozen for the sweltering heat we were experiencing.  I was really fortunate to be sent a big box of Fresh As freeze dried fruit products before Christmas.  Also included in the box were their latest recipe cards which all look sensational.  This Raspberry Semifreddo caught my eye - it only had 5 ingredients and took less than 10 minutes to make.  Perfect!  I'd never made or even tasted a semifreddo before but I'm so glad I have now!  I could never have dreamed how delicious it was going to be!  This brilliantly easy and totally delectable recipe is now permanently on my go to list!

4 eggs
150gm castor sugar
300ml cream, whipped

Beat the eggs and sugar for about 5 minutes or until very thick and pale.

Lightly fold in the whipped cream, raspberry powder and whole raspberries so the mixture is rippled, reserving a few whole raspberries for serving.

Pour in to a shallow dish, cover and freeze for at least 5 hours.
