Healthy Chia Seed Recipes with Healtheries

In my on-going search for healthier food options, I've discovered chia seeds to be a little powerhouse of ancient grain goodness.  These teeny little seeds, which are native to Mexico, come from a flowering desert plant which is part of the mint family.  Chia seeds are high in omega-3 fatty acids, dietary fibre, and essential minerals including magnesium and calcium.  Healtheries have three fabulous new chia seed products available - white chia seeds, black chia seeds and ground chia seeds which are nothing but raw, gluten free, 100% chia seeds.  I've created three healthy and delicious recipes using each one of the new products.

The thing I love best about these mild and pleasant tasting chia seeds is that they are so easy to include in practically everything.  I've been putting them in to my daily green smoothie for over a year now but I've also started to add a tablespoon or two of them in to rice, meatballs, bolognese, corn fritters, curry, stews and lots of baking.  I've sprinkled them over yogurt, fresh cut up fruit and salads.  I've even mixed them in with bread crumbs when I've been crumbing fish.  You can use them everywhere for a nutritious boost.

The other neat thing about chia seeds is that they can hold up to 12 times their weight in fluid, and when you soak them in liquid they create a jelly like substance which is perfect for making healthy puddings - which leads me to my first healthy and delicious recipe...

Chia Seed Breakfast Pudding with Healtheries White Chia Seeds
4 tablespoons Healtheries White Chia Seeds
200ml coconut milk
300ml greek yogurt
½ teaspoon vanilla extract
½ teaspoon honey (optional)
1 - 1½ cups mixed berries

Combine the chia seeds, coconut milk, greek yogurt, vanilla and honey (if using) in a bowl.
Stir until well combined.
Blend or mash the berries.
Divide the chia seed mixture between two bowls.
Add the berry mixture to one of the bowls and stir well until combined.
Refrigerate for overnight*.
Stir well then spoon in to bowls.
Finish by topping fresh cut fruit.

*If you wish to assemble ahead of time you will need to refrigerate for at least one hour to allow the chia seeds to absorb the liquid and expand.

As well as being a healthy breakfast alternative, these chia seed puddings would make a perfect summer dessert.  Simply shave a wee bit of dark chocolate on top.


Zesty Chia Seed Dressing with Healtheries Black Chia Seeds
1 clove garlic
1 tablespoon dijon mustard
2 teaspoons honey
¼ cup fresh lemon juice
½ cup olive oil
2 teaspoons Healtheries Black Chia Seeds
Pink Himalayan salt

In a small blender combine garlic, mustard, honey and lemon juice and blitz until well blended and smooth.
Slowly add the olive oil while continuing to blend.  The dressing will become thick and creamy.
Stir in the chia seeds and season to taste.
Makes approximately one cup of dressing.
Serve over fresh salads and cold roast vegetables.  Perfect for summer barbecue's.


Raw Carob and Chia Seed Bliss Balls with Healtheries Ground Chia Seeds
1 cup medjool dates
½ cup raw almonds
½ cup raw cashews
⅓ cup carob powder
3 tablespoons Healtheries Ground Chia Seeds
⅓ cup shredded coconut

Blitz all the ingredients together in a blender or food processor.  (You may wish to soak your dates in hot water for five minutes to help with the blending process but it's not essential).
If your blender is struggling you may need to add a small amount of liquid.  I would recommend water or fresh squeezed orange juice at a teaspoon at a time.
Once well blended and combined, take a teaspoon of the mixture at a time and roll in to bite sized balls.  Then lightly roll the ball in fine coconut, carob powder or chia seeds to coat the outside.
Refrigerate to set.
Store in an airtight container in the fridge.

  2. I have just discovered Chia seeds ( well not even that as I have not even tried them yet!). These recipes will give me the inspiration to make them an everyday food. The breakfast pudding sounds so yummy , healthy, and easy. I am starting down the gluten free path due to issues and breakfast is my biggest struggle!
